Another Potato preparation goes as follows. I usually have the potatoes boiled before hand, which comes handy & one can always prepare anything out of this. If morning then for break fast, if noon then for lunch, if evening & boiled potatoes are still there then for sure "Aloo Tikkis" for the evening snack.

Ingredients:
Potato - 2, boiled, peeled & mashed
Green Chilli - 2-3, as per taste, finely chopped
Onions - 1 medium, finely chopped
mustard Seeds - 1 tsp
Curry Leaves - 1 medium twig
Oil - 1tbsp
Turmeric Powder - 1/2 tsp
Salt to taste
Method:
Mash the boiled & peeled potato lightly so that you find the pieces of the potato. Now heat oil in a wok on medium flame. First add the mustard seeds & allow it to splutter. Then add curry leaves & lower the flame. Add green chillies & fry for a minute. Then add chopped onions & fry till translucent. Now add turmeric powder, salt & fry for a minute & then add the mashed potatoes. Mix well so that all the spices & the taste of them blends well with the potatoes. As the potatoes are already cooked, just leave it on fire for a minute or two & turn off the flame.
Serve it hot with roti, poori or simply with rice & dal.
