Another Mangalore delicacy called as GOLIBAJE (ಗೋಳಿಬಜೆ) in Mangalore . Since my college days, I've enjoyed this preparation at UDUPA, a Mangalore fast food at Rajajinagar 1st block. It was prepared only in the evenings, but got exhausted, sometimes even before time. Used to be YUM! But unfortunately they have brought down the entire complex. No idea if they,ve opened elsewhere. Anyways now I prepare this delicacy myself to treat my family.
Ingredients: Maida - 1 cup
Sour Curds - 1/2 cup
Jeera - 1 tsp
Green Chillies - 1-2,finely chopped
Coriander Leaves - 1-2 twigs,finely chopped
Ginger - 1",finely chopped
Baking Soda - 1/4 tsp
Salt as per taste
Oil for deep frying

Method:
-->Mix all the ingredients together in a bowl such that no lumps are formed. The batter should be thicker than the usual bhajia batter. Heat oil in a heavy bottomed pan or wok. Now scoop out small portions of the batter with your hand & drop into the oil. Cook on low to medium heat. -->Golibaje is done when they turn golden brown in color. Remove and drain on absorbent tissues. Serve hot with sauce or any other chutney of your choice. Yum!
